Did a 6 course meal on sunday night for my friends anniversary dinner.
Course 1: pressure cooked chicken stock, infused with aromatics, then reduced by half to really concentrate the flavor with croutons, enoki mushrooms, shitake mushrooms and confit eggyolk

Course 2: duet of short ribs. Braised over parsnip puree with a sauce made from braising liquids with short rib ravioli finished in a red wine sauce

Course 3: sous vide lamb chop with rissoto
Course 4: seared duck breastwith apple, fennel, olive, dried cranberry and gastrique

Course 5: sous vide ny strip with beets, golden beets, pickled beets, duck fat roasted mushrooms, chocolate chili sauce

Course 6: apple gallete with vanilla cinnamon ice cram with amaretto and raisins with a brandy snap hat
