The thing is that I want to get enough space for the other components, so I have to be ~precise with the diameter of the tuile (and also that it doesn't bend/roll). My "recipe" is grinding almonds to "butter", flour, sugar and egg whites. I have a 9cm ring mold, and I am thinking of baking the tuile with baking paper on the bottom and on the top, and placing a baking tray on top (so it doesn't bend). My question is: Will the tuile shrink to a diameter less than 9cm, and if you should guess - how much?
