Looks delish! How do you like the CS recipe? I have an old school recipe I got when I was taking french cooking classes (a million years ago!) that I am going to modify for sous vide.

I like the recipe. First time I made it I followed it to the letter. Did so this time except added more booze (and different ones....I used some medium dry sherry, sweet marsala and then Calvados). I added more because the recipe calls for 250 ml and with the proportions given, it didn't quite yield that amount first time around. I mean, who doesn't want a little extra booze in their Pâté, right!?!
I'd like to see your 'old school' million year old recipe please!

When I was very very young my great grand mother would feed me chicken liver and lots of avocado... I had triple e shoes a couple of chins and my father's best friend named me baby Buddha!

This is from a free ROP class that my wife and I took about 25 years ago. Basic but tasty.
