Hi everyone! My name is James, I've been following Chefsteps for awhile now wanting to try many of the things I've seen. I recently bought joule and have loved using it. I am planning on making the homemade eggnog and was wondering about turning it into yogurt. I have received advice that the eggs and sugar would affect the fermentation, and hydrocolloids would probably be the better route. Any ideas on what would be the best thickener to use to create a thick Greek style eggnog yogurt? Or could I ferment the eggnog base with existing yogurt?
