I was skimming through BarfBlog and found this post. 

Does anyone know if this information is available or will be available in a cook friendly format, as it has been far too long since I was in a science classroom.

When working on Modernist Cuisine, Nathan did an enormous review of all published literature, summarized it in a table that's published in volume 1 of the set. I don't know of any other accessible source for current information.
