More preparations ahead of tomorrow's xmas tasting menu. Quickly boiled this big boy to remove meat and will be poaching it tomorrow with some garlic butter.

Lol. I only needed one for my appetizer dish since it has lots of meat.

Poached lobster caviar and sea urchin with a glazed of reduce citrus sauce. (Need a shorter name.. lol)

I never would risk getting it that close. If my better half ever found out she would probably go from being the Commandant/Admiral/General around here to "Der Wiffen SS" and make whatever that crawdaddy (or Lorena Bobbit) could do to me look like a flesh wound. Any guy that has been married for a while has surely run skeered and probably peed themselves a little the first time their Wiffen SS appeared. The smart husbands in the bunch have likely only seen their Wiffen SS only once (likely for a minor offence) - and NEVER DID ANYTHING WRONG EVER AGAIN...........
