Elk heart.

Brother-in-law is visiting and brought back an elk heart. New experiment that hopefully will turn out great.

Tried my best to carve it..

Infused olive oil with garlic, rosemary and thyme.

Going for 24 hrs @ 135. Will pan sear to finish.
