If just sou vide asparagus what length of time at 88C and can you hold them in the water for one hour?

The longer you leave it in the softer they will get. If you want to hold them, cut the temperature down to like 140'F to keep them hot without too much more cooking. I usually cook mine at 82C for 20 minutes. At 88C it will cook faster, 10-12 minutes.

Your best bet will be cook them for the specific time/temp then plunge in ice bath. Then at service retherm with Joule or hit them in a pan/butter.
Im doing some right now that will be traveling.

Quick chill after the cook then drop them in at a much lower temp (e.g. John's recommendations) and finish stove top if desired.
