Nixtamalized carrot and winter microgreens. Greens doing well and the carrot was for fun. Needs to be thin (did a few sizes/thicknesses) or baby carrots. Interesting texture, closer to a leather than a puree like the salsify makes me wonder about finishing using other methods (traditional glaze etc).
