Oh gawd.. I love pheasant!! Reminds me of hunting with my grandpa around Yakima (60's)... kicking a melon open along the way and a little shake of salt! He always did a sear and stew... memories 😊

My personal advice: Pheasant breast (starting temperature 3 + Celsius fridge) => 54 Celsius Degreas for 45 Minutes. (Holding up to 2 Hours without any texture or taste difference. ) packing: No pre sear, optional LIGHT herbed butter plus black pepper <<NO SALT, 100% Vakuum, afterwards: quick pan sear 4x 25 seconds or Ofen 300 Celsius grill plus convection 3- 4 minutes. No resting time needed. Temperatures in Celsius and not Fahrenheit. Best wishes
