You might like to peruse the 'GAME' meats. While elk isn't listed, there is venison which is gonna be about as close as you're gonna find.

I did my last one at 164°F, Brian provided the link. I think if I was doing another I would drop the temperature to 158°F for medium well braised texture. If you want it pink I would use 140°F for 24-36 hours. I was having people over that were skeptical about elk to begin with, it was very tender but a little dryer than I wanted at 164°F.
