Black light for crab picking
carolmelancon
I was making crab dip today and thought to post this just in case everyone hasn't heard this yet. Think I learned this years ago from Susan Spicer: Use a black light when picking over crab meat. The shell bits fluoresce and "jump out" from the meat.

Whoa! Super cool!

My first thought was that the black light literally makes the crab meat extrude out of the shell. Lol. It's been a long day

I owned a restaurant many years ago in Richmond, VA and served wonderful crab cakes. My source was a small picking house near the Chesapeake Bay that used a black light. It was such a clean pick that I bought all their production, sharing the production with a major private club here in Richmond. I can still smell that wonderful fresh crab meat today.
