Can I continue cooking?

Had some short ribs in sous vide, targeting 72hrs @ 129F. Last night I had a power outage with about 18hrs remaining in the cook. I removed the short ribs and threw them into an ice bath. So, can I throw them back into sous vide to finish the cook for another 18hrs?

Absolutely!! You did the right thing by icing the ribs down. So now you can pick up where you left off!!

Not sure how quickly you got to them after the power went out? If you got yo them before the temperature had dropped below 130° for more than an hour, yep your good to go. I would add about an hour to get the core temperature up to temperature and then go forth. In the even that this happened un noticed, put it in a pressure cooker and finish that way. This was a suggestion that Chris and Grant gave us when we were at CS in response to a question from @Todd_Shewman_38102

Ribs came out okay. I know I can do be better. I bagged it without pre-searing or seasoning. I removed ribs from the bag, covered them with S&P, and into the oven to broil. Got a nice crust. Beefy flavor, tender for the most part. Had 1-2 pieces that were not so tender.

I need to find a source for unprocessed short ribs. Would like to try again with a slab of 3-4 ribs or just longer short ribs.
