Its always best to be updated by your facebook page and learning new cooking techniques I ordered joules sous vide last week and its on the way for delivery.
Need a question to ask, I was thinking about waterbath cooking for Idli. Idli is southern indian recipe which is fermented rice+lentil batter, we mould it in stainless still moulds & steam it for 12mins. We were thinking if steaming application can be replaced by waterbath sous vide application ? Well, we are still working on how to donit. But if you ever tried to mould a batter & cook in sous vide, can you share us your ideas on how to do it please you can ? We saw your recipe for creme brulee but cant actually do making Idli in it.
