hey all - have some boneless beef short ribs in meant to finish cook tonight but double booked myself. Anyone had any success/ experience at going to 96hours...would hate to waste the product and eat meat mush - g

nope, but you should be fine. If concerned, pull them out sooner and finish later with long cook period.

Take them out and fridge em then reheat for an hour or so sous vide back to the same temp?

If you stop before 72hr, yes. You can put them in at the beginning of the day for that matter and you'd be fine.

Remember to ice them down if you're going to take them out early before putting them in the fridge.
