When meat is thicker than the options on the app...?
ppax86
Hello,
I recently wanted to cook a ribeye that was 3.5 inches thick. The Joule app only went up to 2 inches, so I ended up guessing. Is there a way to calculate cook times when the cut is thicker than what is available on the charts?

The most accurate is to use a thermometer and make sure your temperature has gotten to center core. Second would be to use the Balwin charts or a reference book or app. Or lastly use a guide that is closest, like a guide for a roast.

From the ChefSteps Sous Vide Steak page,
https://www.chefsteps.com/activities/sous-vide-steak
, they put up a quick guideline:
Well, my steak is thicker than that. So do I cook it for longer?
Yes! We recommend 60 minutes for 1 inch, 90 minutes for 1.5 inches, and 120 minutes for 2 inches. What about thinner steaks, you ask? A three-quarter-inch steak will cook in 45 minutes, while a half-inch steak will take 30 minutes.
.....
Seems to be 30 min for each half inch/1 hour per inch? 3.5 inches = 3.5 hours. That seems pretty close to the prime rib roast and tenderloin roast times on the Joule app. So yea, I l would go with John Fisher's suggestion of using the roast times (the tender cut roasts anyways; the tough cut times would dry out tender cuts of meat when cooked too long) for a quick guide as I'm pretty lazy and don't wanna look up more tables or use fiddle with the bag to take temp more than I need to.
