I really want to buy the Joule; however, the more I read about it the more questions I have which I wish I could chat with somebody about. I asked a question about which thermometer to use on another page but did not get an answer. I am hoping that someone can help me here. Here are my questions: (1) I read that using a plastic container is recommended as plastic is a better insulator. I have a small kitchen so I would like to use my pots, Calphalon, Dutch oven, etc. Is there a difference in taste when cooked in pots or plastic containers? (2) A good thermometer is recommended. I was about to buy the classic super fast Thermapen and then I came across the needle style K probes? Do I need those? (3) I have Food Saver bags and a small vacuum sealer. Should I use the food saver bags and vacuum the meat, etc. or regular Ziplock bags and no vacuum? (4) Do the pots I use have to be cast iron and Dutch oven? What material is NOT recommended for Sous Vide cooking? Thank you!
