Im doing a large prime rib roast, approx 23-25 lbs, it measures approx 24-30 inches in length and is approx 6-8 inches wide. What are some thoughts on doing this with joule, Im looking for a nice Med-Rare, I've done a few little things with joule never something quite this size. Does anyone have any recommnedations on cook time and temp? I'm seeing anywhere from 16 to 24 hours for cook time. Its an expensive cut of meat and its for a friends wedding and will be on a carving block
