I'm thinking 208F is the limit ... correct me if wrong. Is Joule's firmware up to date ... there was an update a while back that upped the temperature.

It is 208'F at sea level. Mine will only go to 205'F due to my altitude/elevation of 1847 feet above sea level. A few versions of the Joule app back allowed us to go to 208'F or equivalent at your altitude. The previous was 194'F.

Both John and pd3ski are right. 208F is the limit _if_ you are at sea level. Otherwise the limit is -2C from your boiling point. We talk about it a bit here

If you have an older version of the firmware then it will be limited to 194F.
