I've been practicing (every week) nailing down how to make really good holey (holy) bread. After months of weekly baking, I think I can stand tall and say with confidence that I have earned my street cred for Pug bread!

Now that is some open crumb! Dang. So well distributed through the loaves. Looks great.
What did you learn in your months that you can pass on?

In a nutshell....less is more. There is no kneading, just folding (it's a very hydrated dough). After folding, time in the fridge (average is 3 days) to age and slowly rise. Then more of same less-ness....pour the dough out of the container (gravity works well!), gently divide into two loaves. Fold each loaf gently as you would a letter, and turn it over. Hour later, gently turn the loaves back over and very delicately shape the dough to elongate a bit, rise then bake in a steamy oven. The less you touch the dough, the more the air bubbles created by the yeast can remain, thus holey/holy bread!

Nah! Grab some flour, yeast, water and salt and giddyup after it. Truly this bread is very simple to make.
