Long cook problem

so I set joule to cook some wagyu short ribs last night. Plan was 144 for 72h. Went to bed at 10:30 everything was fine. Woke up and joule was off and the water was 72f. What should I do? I don't really want to toss the wagyu ribs out. This is my second joule so i figured the problems I had earlier (same problem) would have went away, they didn't. It still loses signal or power or something and shuts off randomly.

Can I just put the ribs back at 144 and cook them 72h from now? Kind of an expensive lesson here.

EDIT: It was cooking at 144 for at least 4 hours (at 10:30pm) before it crapped out. I was sleeping from 10:30 - 6:30am, I check at 6:30am and the temp was 72, circulator was off.

You didn't specify when you woke up. I am assuming that you slept more than 4 hours. It is possible that the water temp fell below 140F soon after you went to bed. That would mean that your ribs spent an excessive amount of time in the danger zone. Yes, expensive, but personally, I would chuck them.

I've not had Joule turn off by itself, even using it over several days. I would certainly open a ticket in the app and have the folks at Chefsteps look into your situation. I believe they can look at the data.

I woke up at 6:30 and checked - I sort of half figured there would be issues like before I guess. So yes, 4 hours is very reasonable based on the temp of the water when I turned it back on.

I was hoping that the time it would be in there would kill off anything that is going to hurt me.

This is my second unit, exact same problems as the first unit I had. I presume it's a power problem at my house, or a network problem at my house. Even now at work, I cannot check the temp on my Joule at home, says I am disconnected from joule. Very very irritating - especially when it costs me wagyu ribs.

Once joule is connected to your wifi you should be able to see it from anywhere. I regularly start / check / stop mine from work. I'd open a ticket.

For the expense of the loss I will likely just use my sansaire in the future.. unfortunately. Not that it is better, it's just less high tech - less to go wrong.

As Todd said, put them in a pressure cooker and you should be fine. My other question what type cover did you use? The only time I had my Joule stop, when it wasn't a power outage or bump, was when I allowed the evaporation steam to be funneled up around Joule and it over heated and shut off.

I used plastic wrap. One could say it was set up in a fashion that would make this scenario very very plausible. Do you think that is it?!? I'll feel like a real donkey if that is the case. I figure since it was sealed it wouldn't matter.

Perhaps it is time to buy some ping pong balls.

Personally, I think plastic wrap works fine, you just have to make sure it is wrapped closely to Joule and leave the top exposed. I think closed cell foam that floats on the water with a cut for Joule works better, or a custom lid better than ping pong balls, IMHO.

I took a Coleman cooler and cut a hole in the lid. Then I just shove some foam around Joule to fill out the hole.

I was definitely not tight around Joule. Support suggested updating the software (which I think I did, but this is a new joule, so I don't recall), so I am going to do that and run it for a couple days to see what happens - with no food. In the meantime I've bought new ribs for sunday night.

Side note: Chefsteps service in insanely good.

Just an update. The unit didn't come with the updated firmware so I've updated it. I also adjusted the 'lid'. Everything seems to be fine now. However it does still trip my GFCI plugs randomly which is odd. Neither of my other circulators do that (DIY one and a Sansaire). Not sure why that is happening. I have zero knowledge of electrical, but unless all my GFCI outlets are faulty (it's tripped 3 of them), I don't know what else it could be.

Hi all, I am having the a similar problem with St. Louis Ribs. I was really looking forward to my ribs. I left home after 10 hours at 150*. When I returned four hours later I noticed the plug came loose, the temp dropped to 85* I boiled some water to give it a boost and it got back to 150* in 20 minutes or so. Its been there for 10 hours. Ehat do you al think? Are they ok after all these hours plus a few more? Should I pressure cook them? Or, should I toss the ribs? I'm ok tossing them because as we all know food poisoning sucks big time. I'm a big boy and I think I know the answer - better safe than sorry. It just might be a great day to make a couple of pizzas.
