Thermocouple or infrared with K-type probe for sous vide core temperature measurement?

Hello,
Recently I bought the sous vide supreme demi, and have tried it a couple of times with OK results.
To increase the accuracy and monitor the core temperature s to get even better results, I want to buy a good thermometer.
I read on chefsteps that the thermoworks thermocouple TW8060 would be a good choice, but I also want an infrared thermometer.
So my question is, is the Thermoworks model IRK a good alternative? Or is having two probes better?
The K-type probe I want to get with it is the miniature needle probe (113-182).

If your infrared needs are modest, I use the IR mini to temp pans for searing. Works great.

I use a Thermapen for most other things, but the K-type thermocouples obviously offer more flexibility. So far all of their products have been extremely solid.

Thanks for the info Brandon. I want to use the infrared for temping pans and my BBQ.
And K type mainly for sous vide and maybe a second probe for in the oven.
IR mini looks fine, but then I will have to buy 2. The ir mini and still one for the probes.

The TW8060's audible alarm and better accuracy are great features in the context of sous vide so I don't consider the IRK a good alternative

Ok, the accuracy is something I don't fully understand yet. Is the 0.7 or 1.0 degrees Celsius accuracy at each temp or is it better at for example 50 degrees Celsius?

If you look at the thermometer specs there's a temperature range at which the given accuracy applies.

Yes, but that is a wide range. And I was hoping that there is info on smaller ranges

Maybe I'm not completely understanding your question.
For linearity sake, accuracy over a broader range is considered a good thing.
Anyway, according to the specs, the
TW8060
is accurate to
to within ±0.7°C of the displayed temperature over the entire sous vide range.

Ok, I think I understand it now. Think I will go for the TW8060 and the IR mini.
