Oh man, this one is a keeper, just tall enough to give knuckle room, not too thick or thin, nice stiffness to it and sharp as a banshee ootb, fit and finish awesome. This one really impresses me! So much so that my beloved 270 gyuto might be moving to Australia into a happy new home.... can't even believe I said that... but hey you're my sponsor 😢

BTW can you tell me more about the petty? Looks like it may be single bevel. 170 is a unique length, most cap out around 150.

Hey Jason .. it's a 180 but like so many jknives it runs short of the advertised length. I really wish all vendors would state the actual length. It's a double bevel and very thin, what you are seeing is a faux bevel applied. Not my favorite thing, so I've been taking the green side of the sponge to slowly erase it. It's from Aframes Tokyo it's one of his house brand Tesshu made by Kenichi Shiraki, the ginsan version.

What is a faux bevel? How are you erasing it? Some pictures may help.

I agree about the length. I really holding the knife before buying so I get sense about it.

I've never seen AFrames before. Where do you shoo for your knives?

I've never seen the process but it goes like this, the whole blade is finished with a grit that makes uniform marks. Then from the edge up to that line you see in the middle it is marked with a different grit that makes it look like a secondary bevel when in actuality it is flat. Usually I use sand paper from around 250 up to 2000 to remove it but I'm lazy so every time I wash it I take the abrasive side (green) of a scothbrite sponge and pull it lengthwise. They make a wheel out of the same material for bench grinders, one of these days I may pick one up.

Yup that's the knife, the blue steel one is a great one for the money. I've got a 150, really great for making garlic or shallot dust ;-)

This really started when I would get the Japan Woodworker catalog ( Fred sold it to Woodcrafters but they still sell nice knives) in the 90's looking at Teruyasu Fujiwara's knives wondering what the deal was. At the time I had already made my move from the Germans to Macs. Then the internet really started happening so I've poked around for a while and saved a few links that just don't show up in a google search.

Yup. I also got a 215, and I haven't regretted it for a second. I just used the 15% off coupon they send when you register it to buy a thousand each of the 6x10 and 10x13 bags. It's a great tool.

I've got a few Ryusen Blazens that I love. Not as extensive as your collection, but I like 'em.
