Hi guys, I'm about to purchase a molecular book and I bumped into a few of them I was thinking about Molecule-R Molecular Gastronomy Cookbook and Molecular Gastronomy: Scientific Cuisine Demystified, which one do you recommend ? Feel free to give me other examples if you know

YMMV, but as a rule I tend to avoid anything that uses the phrase "molecular gastronomy". I believe it cheapens the techniques and methods by reducing them to parlor tricks at the expense of making delicious food. I purchased one of the Molecule-R kits several years ago and found that the tend to put a bit too much emphasis on the flash and bang of modernist cooking. Not to put too fine a point on it, but I think stuff like that gives avant garde and even just modernist cooking a bad name.

I'm aware that sounds super judgey and pretentious. But I view that stuff as inhibiting innovation rather than fostering it.
