Baby vs Spare
shorewoodbill
Your recipe is for baby backs and I am cooking spare ribs. Watching Meathead's video, he cooked the spare ribs longer then the baby backs, what do I do to convert your recipe?

It just depends on the thickness. The spares could be slightly thicker but I don't think it would add too much time. You could add an extra 20% or so, but honestly that's just a guess. Use a temp prob to be sure you hit the temp you wanted and then you'll know for next time. Also texture could change depending if you want fall off the bone or more steak like using longer times to get more fall off the bone. I do ribs (either baby back or spare) 183F for 6 hours and then toss on the smoker real quick and hot to finish off

I do them the same, 167°F four hours and then finish.
