Sharpening Pacojet Knife/blade?

Hi! As the title describes, I wonder if anyone has tried to sharpen the blade to the pacojet? Or do you buy a new one? Used mine for 3 years now (1 year in restaurant and 2 yr at home) and realized that my soggy results may come from that the blade is dull and that makes the shavings bad and/or it generates heat...

I've searched the almighty google but cannot find any instructions indicating that you can sharpen them...

To try to sharpen it? I Guessed so, and it is so critical that it keeps it's balance so i guess its better to just buy a new one ...

I happen to know the US service people of Pacojet and was wondering about the same question for my own system. So here is what I found out:

Like any blade, it wears off over time and cannot deliver the desired ultra smooth texture - or shave off consistent and ultra thin layers. A dull blade also causes additional stress for the Pacojet machine in operation.

As you already guessed, the blade requires an absolute precise geometry. Individual sharpening of the Pacotizing Blade will further alter the blade geometry and can never reinstall its original geometry. So, the answer is a replacement of the blade, which is about $150. It would be nice if you could just let it sharpen somewhere, but I don't know if you can find anyone who can do the perfect job.
