In case anyone is kicking themselves for not nabbing a spinzall, just got an email confirming shipment in a few weeks, and also this nugget:

Do you have any friends or family members who missed out on the Spinzall pre-order? We have a few units left in our pre-order batch. Email service@modernistpantry.com and put "Spinzall Purchase" in the subject before August 7th, claim your Spinzall, and receive your unit as part of the pre-order first batch, directly from China.

Word. Best way to do this? Spinzall sub-thread on CS? Start a new forum somewhere else? All of a sudden, the number of people with 'fuges in their houses will increase by...a lot. I expect many will want to share experiences.

Also, someone else will understand my excitement.

Me: I want to spend $700 on a centrifuge.

Wife: whaaa? Why?!?

Me: Clear juice. And pea butter.

Wife: dumbfounded look.

Me: I know that sounds dumb, but it's actually awesome

Anything starting at ~0.1g? I do it all the time.

Squeezable drop bottles. They take up the same amount of space in the fridge as regular bottles do, are dirt cheap, no need for yet another gadget and no need to clean nozzles either.

A lot of 'fuge stuff is being done in the context of cocktails and liquids only. I use volume for cocktail stuff in general (and mass with cooking) because you're dealing exclusively with liquids, and the liquids all have differing densities (simple syrups of varying densities, saline solutions, alcohols of differing proofs, etc). Unless you know all your densities down pat, it is pretty hard to use mass in the context of cocktails and so volumes are easier.

As opposed to cooking where mass is steady, and volumes can vary dramatically depending on how stuff is packed, in the liquid world, volumes are steady and density varies dramatically. Case in point: who here knows the specific gravity off the top of their head of a 1% chitosan solution and kiesolol?

The specific gravity of basically any 1% solution is so close to 1 that for most intents and purposes the difference just doesn't matter in the kitchen. Yes, I know that chitosan doesn't readily dissolve in pure water but needs a bit of acid, too, and no, that extra ~1% acid doesn't make a difference either.

All liquids have mass, which can be measured on a scale as easily as the mass of any solid substance. And, for me, most importantly, definitely much cleaner with less waste than by volume using common measuring spoons or jiggers. A jigger filled to the brim almost invariably results in spillage. Now, you could argue that this is because of my skills (or the lack thereof...), and you would be right

However, the very existence of bar mats indicates that I'm far not the only one challenged by volumetric measurements for drinks.

I don't need to know the densities of anything; even my favorite lemonade receipe from this past summer starts with mixing 30g lemon juice with 35g lemon zest infused 5hour toasted sugar simple syrup...

I do count the drops of enzymes for clarifying, though.
