No recipe (sorry), but I am quite confident this will work. Use the CS chocolate gelato recipe. The remaining element is the mint commonly found in the after eight. Two ways to address this would be:
1. Use/add a mint extract in the recipe.
2. Infuse the cocoa butter with mint.
Let me know what you end up doing as I'm not a mint-chocolate fan personally, but have a couple people here that are and they love it as an ice cream.

FWIW, I've done

with other flavors (passion fruit, donuts, etc) and it has works quite well. Not sure if you want to play more :-) but the recipe into a siphon and dispensed into LN2 makes a really cool (pun intended) light donut. :-)
