No recipe (sorry), but I am quite confident this will work. Use the CS chocolate gelato recipe. The remaining element is the mint commonly found in the after eight. Two ways to address this would be:

1. Use/add a mint extract in the recipe.

2. Infuse the cocoa butter with mint.

Let me know what you end up doing as I'm not a mint-chocolate fan personally, but have a couple people here that are and they love it as an ice cream.

FWIW, I've done #2 with other flavors (passion fruit, donuts, etc) and it has works quite well. Not sure if you want to play more :-) but the recipe into a siphon and dispensed into LN2 makes a really cool (pun intended) light donut. :-)
