spaghetti sqaush is amazing! I eat it that way all the time, sometimes I throw some ground chicken into it or shrimp!

We Should do a Collaborative Dinner sometime (if we happen to be in close proximity lol). Your food style and attention to detail bodes well with the food I tend to serve.

Like you said before im just jumping into doing my first pop up dinner event the end of the month. My menu is falling into place ... im really happy with how its coming together. Just have to put together my main course then start working on everything else.

Im super jealous of the easy access you have to amazing seafood living in the PNW.

LOL .. just a little commute.. well if we are ever in each others city we can plan something.
I love this area. lived here all my life cant imagine anywhere else, the fresh markets are amazing.. you got the local fishers that go out to sea and all the local farmers doing there thing its so great.
I have been working really hard on all the little details right now but .. What i have is..
Starter would be - Charcuterie
course 1- caramelized Scallops with a sweet & sour strawberry salsa, Chiffonade of fresh basil & arugula
course 2 - Fresh Rosemary & Parmesan Risotto with morel mushrooms, truffle oil & micro greens
Course 3 - Working on this one still - I was thinking about steak & shrimp but I really feel I need to keep true to the PNW and do my salmon with a lemon purée and a zucchini ribbon salad and fresh blackberries ??
Course 4 - Deconstructed Cheesecake, Strawberry glaze, along with fresh strawberries and a oreo cookie crumble.
And possibly as a to-go gift lets say a couple scones that each guest can take for breakfast the next day..
Thank you it kinda makes me nervous and pumped all at the same time.. But i know it will be worth it

Weird my last comment disappeared in the reply thread, hopefully this works....
No Problem! Let me know how the beef dish turns out if you end up making it. Good idea on running through all the courses before event takes place. Definitely will help you identify ways to make the "Pickup" easier and more efficient. This in addition to fine tuning flavors and plating.
