Sear without smoke alarm?
ejf12009
I live in an apartment with a very small kitchen; in particular the hood is not very good at removing smoke and the smoke alarm is almost directly over the stove. I'm not at liberty to mess with either. As a result of this configuration, every time I sear meat pre/post sous vide the alarm goes off - frustrating to say the least. Is there anything I can do to get a nice crust without generating much smoke?

Blow torch works well. That or put plastic wrap around the alarm.

Or have your better half fan it with a towel.
Smoke alarms in our house has come to mean there is dinner... Even to the doggies.

What kind of oil/fat? I always had that problem until I switched to an oil with a higher smoke point.

You'll get smoke with a torch from any fats on that particular protein.
I don't think there is a ton one can do.

Robert I've had enough smoke for the alarm while using canola oil, vegetable (soy, I assume) oil, and dry.

Grape seed oil

I have the exact same problem, I just stick a plastic bag over the smoke alarm tbh.
