1st one....butter. Simple easy (and tasty), second, sunchoke puree. Normally just through sieve and reserve. This time through sieve and into rotor. From 400g down to 270g puree and more intense.

i just got mine. i have not played with it yet.
i did ask booker and dax whether the spinzall could be used to clarify chicken stock. the reply that i got: "Dave says he has not had any success clarifying stock in the Spinzall unfortunately." i wonder why that is. what steps did he take? can the stock first be clarified via a sieve and then put in the Spinzall for more clarity?

I saw one where they used continuous mode directly from pressure cooker and it was quite successful. Guess it depends on how you wanto to clarify it. E.g. do you want to remove the gelatin for consomme like or just clear stock.

do you have a link where they used the continuous mode for stock? which result does the spinzall focuses on: clear stock or consomme?

Question for you about the butter. I can't find cream without stabilizers in it (i.e. carageenan, etc.). Dave stated in a tweet that he didn't think stabilized cream would turn into butter, but I haven't tried it. Did you use just regular grocery store whipping cream with the added stuff or were you able to find additive free cream for this?

snowville (from whole foods) has no stabilizers. Others can be found here.

Thought I had looked at all the creams when I was at Whole Foods over the weekend. I'll look for the Snowville brand next time I'm there. Looks like the Dean's pasteurized (not ULTRA) is additive free as well. Didn't even look at it since I always get the ultra.

wholefoods also has organic valley heavy whipping cream, plain pasteurized, without any other additives.

I think it was just on a facebook spinzall group. Didn't really clarify it, but just spun out the solids. Which, IMHO, would actually be pretty helpful.
