Amy lase? Sort of.. I used digestive enzymes (That contain the amylase) as I didn't have any on hand. I am rather pleased with how it turned out.

Nice, next step distillate it with alcohol, gives you a beautiful crystal clear 45%Vol. Banana Schnapps. Or without….a clear concentrated banana essence.

If I'm reading the markings on your beaker correctly, it looks like you have about 50 ml of liquid there. Is that the yield from a single banana?

It's ~300mL from about 5 large bananas

Not so difficult to do. If you don’t have a distill already, mine is just a simple setup with a 2-liter bowl you find in any School chemistry room. Burner, Liebig water cooler, aquarium water pump and a thermometer for about a $ 120.- altogether. The only extra tool really to get is the alcohol thermometer to measure the % Vol. of your distillate so you can adjust it to your needs. on most occasions the product comes out over 50%Vol, so adjusting with destilled water is a comon precedure, All comerical stills working along this procedure.

did you just use pectinex? you didn't used chitosan and kieselsol?
