Doughnut recipe calls for
diastatic malt
. Can I
substitute
it with
wheat gluten
? If yes then
how much (quantity) to substitute
for the recipe?

No. Diastatic malt is a collection of amylase enzymes (break down starches to polysaccharides and sugars). Gluten is the main protein in bread. If you can't get diastatic malt, you could try to get brewer's amylase, but I have no idea about quantity substituting.
