Hey bakers! Can I use cake improving gel instead of Glycerol monostearate in chefsteps' ultimate chocolate cake recipe?
As Glycerol monostearate is an emulsifier and my cake gel has emulsifier too.

What exactly is this so called "cake improving gel"?

It is used commercially in some bakeries in India. Its ingredients are [water, emulsifiers (INS 471, 477, 470), Humectants (INS 1520, 422)].

I made ultimate chocolate cake using cake improving gel instead of Glycerol monostearate. And it was awesome. Very moist, fluffy and of course yummy :-)
