Wood equipment

Hello I noticed that in your kitchen you use wood balconies and cutting boards in usa it's allowed to use that equipment in restaurant kitchens.

I'm asking this because I work in a kitchen from an hotel in Portugal and here we can´t use anything made from a porous material.

There has been a bit of a discussion on the board about that I believe. The gist of it is that more recent research is showing that wood (and bamboo I believe) has natural anti-microbial properties that can help lessen the likelihood of bacteria lingering on the boards long after a wash whereas with hard materials like plastic, the micro-fissures are harder to keep clean and may be more likely to hold bacteria longer. I think the idea also is that wood will swell and shrink naturally to fill in small nicks and gashes whereas plastic lacks that ability.
