After Module 1, looking at prep videos as well as plenty of plating ideas - here is a round top that I butchered down earlier last year.
The colors with the purple cauliflower were really fun, the sear on the meat just gets better and better.

It was rested but not blotted, funny since everything else was ...
I just braised the endive in brown butter, coriander, splash of lemon and a little water, it was the first time mother in law had it so nothing peculiar.

looks pretty good. The problem for me was I was putting a sheet tray on top to weigh it down. That was a bad move. Your plate is looking good. A tip, try to rest your meat before you cut it and after you cut it blot it on a c fold. How did you cook the endive?

I wanted to see what you were referring to with the disintegration, I got lazy and turned on the broiler.

Wow. Really nice composition on that dish. I really like how the juice from the meat is in a ring around the puree, some how it works really well with the radishes.
