I've seen the posts from about a year ago, but I'm not sure this has been addressed.

There should be a way for the Joule to turn off automatically after the sous vide cycle. Seems like a no-brainer that this should be an option.

Why would you want that? The beauty of sous vide is you can leave it in so it will be ready when you are. The other reason not to do this is so it will maintain your product in a safe temperature out of the danger zone.
