Japanese Culinary Academy Books

Anyone here own any of these? They look incredible and I think I want to start learning and cooking more Japanese cuisine so it starts to influence my dishes more. Already feel like I have a strong French classical education, but definitely want to incorporate some Japanese influence into it.

When I saw your post I decided to look into it. I ordered the Mukoita I, Cutting Techniques: Fish and really loved it so I ordered the other two available books. Great explanations and photos. The fish book has some exotic stuff you may not come across like turtle, pufferfish and monkfish but the knowledge could be applied to almost any fish you want to break down from whole. I can let you know what I think of the other two books when they arrive tomorrow.

Please do! Here is my thought process:

Japanese Soul Cooking and Ivan Ramen for my core japanese comfort food education with an emphasis on ramen.

Kaiseki cook book for a look at the high end concept of that dining and plating, etc.

Japanese Culinary Academy to fill all gaps, give me an understanding of the cuisine in all its forms, and show me classic techniques and dishes. Among loads of other things given how much information is apparently packed into those books.

That’s great to hear about Volume 3. That one I wasn’t really considering, but I may look into buying it sooner rather than later. Volume 4 looks like it will translate even better to America and who knows what else they have in store.

So glad you checked them out and let me know what you think! A lot of people don’t seem to be aware of them and it looks like such an incredible resource!

So I have not read both cover to cover but so far I am loving the first volume. Good history of japanese cuisine and lots of traditional recipes. Nice photos, well written, makes me want to cook more japanese food.
