Benu was on our short-list, but I never did make it there. And we moved from SF to Seattle a couple of years ago - a few months after "Al's Place" opened two blocks from our house.
However, Corey Lee was chef at French Laundry when we went many years ago. It was my first tasting menu, and I have fond memories of it.
I recently got the new Eleven Madison Park book and the Jeremy Fox vegetable book, which will keep me busy for a while, but I'll keep this one in mind for the future.

Nice looking book, but price vs. number of recipes and not really being able to cook from it (sourcing ingredients) was enough for me to leave it at the store. One of the few books I haven’t bought because of ingredient sourcing, but honestly, paying over a dollar a recipe is ridiculous. It is cool that it is signed though! And personalized at that!

The book was a gift from another Chef. I do see what your saying, I’m taking this book as a research tool. Reading the story behind these chefs, then take each recipe breaking it down researching and understanding the story behind each dish

That’s awesome! What a great experience !

Yeah I absolutely get that. I’m sure there are elements to draw inspiration from and whatnot. I’m starting to look into the Japanese Kaiseki and learning about the cuisine in general. I’ve given myself a solid French education but I want to start incorporating influences of Japan in my cooking. I definitely thought of giving Benu another look but the price point per recipe is still too much for me. If I was given it as a gift then hell yeah I’d devour it.

Never stop learning right! That’s what I’m about I have been diving into TK techniques more too... learning as much as a can teach myself

Looks like a great book (on my list as well). So many to choose from. :-) Tend not to do recipes as much anymore but use as tools for rethinking things. Of course that means more learning experiences than edible dishes. LOL

Totally using this as a learning book! Notes, extra research.. and hopefully inspirations for new dishes

Look forward to seeing what you share.

I am truly inspired by the work of chef Corey Lee and his achievement of three Michelin stars for his restaurant Benu in San Francisco. As I was reading the book, I couldn't help but think about how amazing it is that despite the vastness and complexity of our planet's geography, people are still able to travel and create amazing projects in other countries. This is a testament to the human spirit and the power of exploration and discovery. And if you're a geography lover like me, don't forget to check out

for some interesting insights into our planet's diversity and beauty. I used this site few yaers ago when i was student, but even now i can find some interesting information for me here. In fact, I have always been fascinated by this subject since my school days. I love learning about different cultures and their unique cuisines, and I dream of one day traveling to every country on the planet. And when I do, Benu will definitely be on my list of must-visit restaurants.
