Looking quiteinteresting @RED, just can imagine the taste! Did you used direct revers spherification?Not that I have extended experience in spherification but along my observationsit appears frozen reversed spherification produce the most even geometricalspheres.
That’s agreat process recipe @DiggingDogFarm thank you for it , as for now I blend tomatodices, strain the solids and further separate fine solids from the water bysimmering in a pot which results in “clear”tomato water and a very fine tomato foam. But the water never reaches theclarity as seen in RED’s picture. I haveto give it a try.
