Lol, have 4. When I spoke with the chef at Kikunoi (Roan), he laughed when I told him. He only uses 2 and never uses a diamond stone only around 3000+8000 (if my Japanese is correct). He showed me how using those stones he still has worn down his yanagiba knives. The smallest was about 1/2 the size of original and handle worn (and apparently changed many times). He has had them for about 20 years. I was quite shocked and impressed.

Where did you go, Kapabashi? Are these from Kamata? Many places do the engraving but they only do chiseled names, and thus all English names are in katakana.

Funny that you mention two stones. I recently got a couple of really nice stones, an Atagoyama sunashi suita and a Nakayama nashiji kiita, that were originally purchased by a young man working in Kyōto. They came from one of the older dealers there (cant remember the name). He has worked in the restaurant system for a couple of years there and when he put the stones up for sale he mentioned that he is scaling down to just two stones. I like this idea but it takes going through a few before such decisions can be made, so many nuances so many variations. I’ve got a good start but miles to go before I arrive
I remember a Masamoto catalog that showed knives that had reached end of life. They received them from chefs sort of as a tribute to the company. They were displayed at their headquarters as a tribute to the chefs! Lol.. those various yanis were turned into ice picks, quite an impressive sight to be sure!

I can't bring myself to get into jnats. It's another rabbit hole, and I don't feel like learning the vocabulary. But I am in the middle of upgrading my stones, so...
