I'm cooking 2-2lb roasts, seared both of them and used water immersion method, a spoon at the bottom of the bag and a plate on top. The water bath also has a lid. Last I checked before going to bed everything was under water. When I woke up the plate had shifted and both roasts had floated up with one tip above the waterline. I sucked the accumulated air from the bags and resubmerged. Is my meat spoiled or will it be safe to eat? I'd planned on refrigerating and searing right before my party tomorrow.
