Rene Redzepi - A work in progress

I just attended Rene Redzepi's talk on his new book "A Work in Progress" in Toronto. I have to say it was one of the best lectures I've seen in a long time and I'm currently attending university so I see a lot of them. The book is also gorgeous. Has anyone else attended one of his book tour events?

There are a few good places to hear from Rene, who is doing a lot of interesting besides just his menu.

Nordic Food Lab Blog, Mad Conference, Mind of a Chef Series 1. My favorite is the recording of a talk on the physiology of taste, covers how nucleotides in katsuobushi amplify the taste of umami in your basic dashi.

Pretty frustrated he attended a city with little culinary standing such as Toronto but skipped Montreal, I guess it is a matter of money but it certainly was an odd decision.

How are his new books?

I like the way the journal is written especially after hearing him read some of the passages. The photography and binding quality is also top notch. The only problem is that a lot of the ingredients are foraged from parks near NOMA so I may not be able to actually cook any of the recipes.

Saw Rene just the other day in the Visiting Chef's series. He was awesome to watch, and the energy, wit, and enjoyment really shines through.

And don't bother experimenting with dried brains.
