Love the site.  One comment on knife sharpening video.  I caution not to mix course grit stones in the same water/container as finer grit stones.  The course grit from course stones can end up embeding in the fine stones and compromising your efforts when honing.  Minor criticism.  Was taught not to do that when sharpening japanese wood chisles when I was timberframing.  Also if you want to make your stones true and flat lap them on a peice of plate glass or a diamond stone.  Hope info is helpful.
