Pork tenderloin recipe
Linda_964035
I want to Sous vide pork and have found great recipes. The pork tenderloin I bought is in 2 long pieces. Do I seperate them in the bag or tie them together in the bag? When I have cooked in the oven, I always tie together. Thank you!

You can tie them rather of you want to. I'm not really sure why you would, as the only thing this would accomplish would be requiring a longer cook time, but you do you.

The recipes I have found make no reference to the fact that tenderloins come in 2 pieces, so I wasn’t sure how long to cook. I guess I will just try them separate and see how it goes. Thank you!

Tenderloins come in 1 piece. You probably purchased a package that contained two of them. Sometimes the tapered ends are tied so that the piece is uniform and cooks evenly, especially when roasting or grilling.

Not long ago I too discovered that the tenderloin packs I'd bought came two tenderloins to a pack. They don't all do that; this is one more case of "let the buyer beware," although since you're paying for it by the pound, one or two pieces isn't a big concern.
I think I got the best results by seasoning and bagging them up separately. Putting them in the same bag may mean they interfere with each others' heat transfer. (I sous vide in a pretty large pot that'll let both of them stretch out comfortably.)
