Southern Potato Salad Temp?

I want to make my family recipe of Southern Potato Salad. It calls for russet potatoes. Would I use the 194 for 45mins? Or would that be too tender for salad?

Depends on how thick you cut them. You can check for texture by squeezing through the bag. But caution: contents are hot!
