This lot (25 large bottles and a few smaller ones) have been hanging around my cellar for a while now. Couldn't resist posting this - anyone else around here into ageing beers?

Hi Martin,
The Chimay bleue can take 2 years without problem. If you have by chance Orval (also from Belium), it peaks after 1 year...

I have a bunch of stouts in my basement from 2014 and on. I also have some Chimay Blues from 2013. Should probably just open those and get it over with. Not expecting much from them at this point. Bought them when I thought Chimay was amazing stuff, and while it is quite good, I've learned a lot since then. The bourbon barrel aged stouts though are always fantastic.

Yes! I like to buy some age-worthy holiday/winter-warmer types around the holidays every year, and then open a few aged ones at Xmas parties/dinners etc. Sometimes compare 'em to un-aged versions too. Kinda a fun thing to do.

Orval is normally aged to about six months before it's sold if I remember correctly. So that would be a year and a half in total? It's bloody lovely beer, Orval - I'll make sure to buy a few to add to the cellar
