I suppose this question could just as easily be answered in a woodworking forum, but I am curious as to the thoughts here. I recently acquired an antique butcher block. It is end grain, about 10" think. It had a rather substantial gouge in the top, which I have since sanded out and the top is ready to be finished. You ask woodworkers and some will tell you mineral oil, some will say a wax and oil finish. Others will say a varnish... Keep in mind this is not for upkeep, as the top is raw woos now after sanding.
