I was riffing around with
Grant's quick Hollandaise. I added a soy marinated egg yolk along with some dried orange peel. I got a wonderful result and a more classical hollandaise color. It seemed a little thin so I added some Xanthan Gum... This resulted in a "Hollandaise pudding" but honestly, I thought it was fantastic! Here it is over some kimchi corn beef hash and under a lopsided poached egg. I'm going to try serving it alongside fried lobster tails as a dipping sauce.
