Food Safety--Cooking STock

I am simmering a smoked turkey stock for my gumbo on Friday--how high should I keep the temperature and how long is safe for it to cook? I put onions, carrots, celery, peppercorns in with the smoked turkey carcass. Love your stuff. Thanks. jz

I don't get the question, while cooking what is a safe temp? You're doing it on a stove I assume so a gentle simmer is safe, probably about three hours should suffice but at a simmer it will be safe basically indefinitely.

Once cooked strain and refrigerate.

Yes, you can simmer indefinitely and be quite safe.

gumbo Recipe. New Orleans Gumbo is said to be a close equivalent to the Marseille

Bouillabaisse.

If your oven can maintain a low temperature pretty well, a nice easy way to make a turkey stock is to put your stuff in a pot, add water, bring it almost to a boil, and put it in an oven at around 200F. You can just let it hang out there for a while.
